Sweet potato hummus is about to become your newest favorite hummus recipe. It is a bean-free hummus made with roasted sweet potatoes, tahini, and lime juice. It’s an easy, delicious, and healthy recipe!

  • 2 medium sweet potatoes peeled and chopped
  • 4 tablespoons + 1 teaspoon olive oil, divided
  • 8 tablespoons (1/2 cup) tahini
  • juice from 1 lime (about 3 tablespoons)
  • 1 teaspoon salt
  • 1 garlic clove

Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. Toss the sweet potatoes with 1 teaspoon of the oil, put them on a baking sheet, and roast in the oven for 20 mintutes. Let them cool slightly then add the them to a food processor.
  3. Add all the remaining ingredients and blend on high for 1 minute. With the motor running, slowly add cold water until it is very creamy and a hummus consistency. You’ll need to add about 1 cup of water.  Taste and season with extra salt, if needed.
